What you need

cup honey

tsp black pepper

cup tamarind paste

tsp onion powder

cup plain flour

tsp paprika

tbsp butter
tbsp cornstarch

cup cooking oil

tsp garlic powder

tsp red pepper flake

tsp seasoning mix
lb wings
Instructions
1. Portion powdered seasonings in a small bowl and mix well to combine. 2. In a medium bowl, season wings liberally with ¾ of the seasoning mix. Massage well until all the wings are coated. 3. In a small bowl, add flour, corn starch and the remaining seasonings. Mix well to form a dredge. 4. Heat oil over medium heat until it shimmers. Reduce temperature to medium-low before adding chicken. 5. Flour each wing and fry on both sides until golden brown and crispy, about 8-10 mins per side depending on the size of the wing. Remove from oil and drain on a wire rack. 6. Combine sauce ingredients in a small saucepan and cook gently over low heat until thick and glossy. 7. Generously coat wings with sauce. Garnish with sliced spring onions and serve hot with ranch dressing.
