Tamarind & Honey Sticky Wings

1. Portion powdered seasonings in a small bowl and mix well to combine.

2. In a medium bowl, season wings liberally with ¾ of the seasoning mix. Massage well until all the wings are coated.

3. In a small bowl, add flour, corn starch and the remaining seasonings. Mix well to form a dredge.

4. Heat oil over medium heat until it shimmers. Reduce temperature to medium-low before adding chicken.

5. Flour each wing and fry on both sides until golden brown and crispy, about 8-10 mins per side depending on the size of the wing. Remove from oil and drain on a wire rack.

6. Combine sauce ingredients in a small saucepan and cook gently over low heat until thick and glossy.

7. Generously coat wings with sauce. Garnish with sliced spring onions and serve hot with ranch dressing.
